  • Polyunsaturated fatty acids (PUFAs), which are prevalent in seed oils, are chemically unstable
  • Heat, light, and oxygen exposure during processing lead to the formation of lipid peroxides and aldehydes, toxic byproducts associated with inflammation and cell damage.
